Dosakaya Pachadi -- Andhra style


Ingredients :
Yellow Cucumber /Dosakaya -- 1 ,peel and chop into small pieces by removing the seeds inside.
Green Chillis -- 2 finely chopped
Corriander Leaves -- finely chopped
Lemon -- 1 full
Turmeric powder -- pinch
Bengal gram/chana dal/senagapappu -- 1 tsp
Black gram/minapappu -- 1 tsp
Corriander seeds -- 1/2 tsp
Mustard seeds -- 1/2 tsp
Cumin seeds -- 1/2 tsp
Asafoetida -- pinch
Dry Red Chillis -- 4
Oil -- 1 tsp
Salt -- to the taste
Method :
1. Heat oil in a pan, add channa daal,urad daal,corriander seeds,mustard seeds,cumin seeds,Asafoetida,dry red chillis, and fry till they turn brown in color and let it cool.
2. Mix the chopped cucumber pieces,lemon juice,corriander leaves,chopped green chillis and keep aside.
3. Now grind the roasted seasoning with salt , into fine powder
4. Now add this powder to the cucumber mixture and mix it well and allow it to settle for 10 min
5. Serve with hot rice.

Bendakaya Pachadi



Ingredients :

Bendakayalu [Oakra] -- 250 gm
Green chillis -- 4
Dry red chillis -- 6
Tamarind -- 1/2 a lemon size
Salt -- to the taste
Oil-- 5 tsp
Black gram/Urad daal [minapappu] -- 3 tsp
Cumin seeds -- 2 tsp
Mustard seeds -- 2 tsp
Asafoetida -- 1/4 tsp
Turmeric --- pinch

Method :

1. Cut oakra into 1/2 inch pieces
2. Heat 2 tsp oil in a pan and drop oakra into it and fry till done
3. Heat 1 tsp oil and add urad daal,asafoetida,1 tsp mustard,1 tsp cumin and dry red chillis and fry till done
4. In a blender add the fried oakra, and the fried seasoning,green chillis ,salt,turmeric,tamarind and grind it into paste
5. Now heat remaining oil and fry urad daal,mustard ,cumin and add it to the ground paste.

Goes very well with hot rice/dosa

Tomato Chutney


Ingredients :
Tomatos -- 3
Oil -- 1 tsp
Asafoetida -- 1/4 tsp
Mustard seeds -- 1 tsp
Black gram/Urad daal -- 1 tsp
Bengal gram/chana dal/senagapappu -- 1/2 tsp
Cumin seeds -- 1/2 tsp
Green chillis -- 5
Tamarind -- pinch
Corriander -- 1/2 bunch
Salt -- to the taste
Method :
1. Heat 1 tsp oil in a pan and fry the tomatos for 10 min,remove from flame
2. Heat the other tsp oil and add mustard,cumin,asafoetida,urad daal,channa daal
3. Let the seasoning fry and and grind tomatos,the fried seasoning,salt,tamarind,corriander,green chillis
and donot add water while grinding.
Goes well with all kind of tiffins

Vankaya (eggplant) Pachadi




Ingredients:

Large Eggplant [pachadi vankaya] -- 1
Onions -- 2, small chopped
Green chillies -- 3 , finely chopped
Dry red chillies -- 2
Curry leaves -- few nos
Mustard seeds -- 1 tsp
Channa daal -- 1 tsp
Urad daal -- 1 tsp
Asafoetida -- 1/4 tsp
Tamarind -- small lemon size ,soak in water
Sambar powder -- 2 tsp [or for sambar powder,shallow fry channa daal,urad daal,corriander seeds,fenugreek seeds,dry red chillis, sesame seeds and grind them ]
Salt -- to the taste
Oil -- 2 tsp

Method :

1. Microwave the eggplant for 15 min by applying oil allover or can cook on the stove
2. If done on the stove , remove the skin that is over cooked
3. Mash the cooked eggplant and keep aside
4. In a pan, heat oil and add all the seasoning with asafoetida and let it splutter
5. Add onions,chopped green chillis and cook till they turn light brown
6. Add the mashed eggplant and cook for 5 min
7. Finally add salt,sambar powder,tamarind juice and cook for 10 more min

Serve with hot rice

Onion Chutney



Ingredients :
Onions -- 2 , chopped into cubes
Corriander seeds -- 2 tsp
Dry red chillis -- 6
Tamarind -- a bit to the taste
Jaggery -- 2 small cubes
Salt -- to the taste
Oil -- 1 tsp
Corriander -- 1/4 bunch
Method :
1. Heat oil in a pan ad fry the onions, keep aside
2.Now fry the Corriander seeds and dry red chillis
3.Take the mixi jar,add the fried onions,corriander seeds,red chillis,salt,jaggery,tamarind,
Corriander leaves and little bit of water[only if necessary] and grind them
Goes well with all kind of tiffins and snack items like dosa,idli,punugulu

Kobbarikaya Mavidikaya Pachadi


Ingredients:

Coconut -- 1 cup of cubes
Raw mango -- 1 small , cut into pieces
Channa daal -- 1 tsp
Urad daal -- 1 tsp
Mustard seeds -- 1 tsp
Cumin seeds -- 1 tsp
Green chillis -- 4
Dry red chillis -- 2
Curry leaves -- few nos
Asafoetida -- pinch
Salt -- to the taste
Oil -- 1 tsp
Turmeric -- pinch

Method :

1. Heat oil in a pan, add all the seasoning and let it splutter till golden brown and keep aside
2. Add coconut ,above seasoning,mango,salt and grind with water if required
3. Add seasoning again with mustard,cumin and curry leaves.

Goes well with hot rice
